A community-led project formed to share the rich cultural heritage of Ejutla with the world, Banhez brings together 35 farming families, providing economic stability and ensuring that traditional methods of mezcal production are preserved. The cooperative structure of Banhez ensures that the farming families who grow the agave used in mezcal production are paid a fair price and that fair-trade practices are followed. The families that comprise the Banhez cooperative have a long history of agave cultivation in this region of Oaxaca, with traditional cultivation methods passed down through generations spanning nearly two centuries.
Mezcal, much like wine in France or Italy, is deeply intertwined with the culture of the regions, with different varieties being produced in each village or region, representing an expression of the terroir and cultural practices of the locality. For this reason, there are strict rules over the type of agave used and the production methods for each region. In Ejutla, the tradition is to cultivate the Cuishe variety of agave, which is harvested once it reaches full maturity, typically around 8-12 years of age.
Characterised by its rugged environment, Ejutla is a high-altitude region in the valleys of Oaxaca, situated at 1,379 metres above sea level. The region comprises four rivers, providing the agave growing here with adequate water sources and drainage, which it is unable to receive from the low levels of annual rainfall. The soil composition of the Ejutla region is primarily calcareous, with soils rich in calcium carbonate, contributing to the flavour profile of the agave.
Crafted by Unión Productores Agrícolas del Distrito de Ejutla de Crespo (UPADEC), Banhez Cuishe is made from 100% Cuishe agave, which are usually harvested between 8 and 12 years old. The agave piñas are roasted in earthen pits, then milled by horse-pulled tahonas, followed by fermentation with native yeasts for 5-6 days. Led by maestro distiller Luis Pacheco, the agave is expertly distilled in small copper pots before being bottled at 47% ABV to preserve the expressive notes of the mezcal.
The resulting product is an incredibly easy-to-sip mezcal with enticing tropical fruit notes, supported by the acidic dryness and herbaceous notes that this species of agave is typically known for. Each sip delivers a thoughtful expression of the terroir of Oaxaca, carrying the legacy of community, craftsmanship, and tradition of the region, wherever you are.
