François Voyer fine Cognacs
The oenologist and cellar master of the François Voyer house, Pierre Vaudon, strives to provide Grande Champagne cognacs with ever-higher aromatic levels. For three years, 10 to 20 percent of each harvest is aged in new barrels, while the remaining 90 percent is aged in used barrels to enhance the fragrances. They employ French oak from the Limousin in addition to the Bercée, Gâvre, or Reno Valdieu forests. The humid natural conditions in the cellars have an impact on the bouquet's refinement or suppleness. While the dry cellars purify the eaux de vie, the humidity softens them.
