Sullivan's Cove is an Australian whisky distillery that produces a range of single malt, double malt, and peated whisky. The distillery is located in the Tasmanian town of Hobart, on the island of Tasmania. Sullivan's Cove was founded in 1994 by David Baker, who is the current owner and distiller. The distillery uses a traditional pot still and column still process to produce its whisky. The whisky is then aged in ex-bourbon, ex-sherry, and ex-wine barrels. The barrels are hand-selected by the distillery team and are made from American oak, French oak, and Australian native timbers. Sullivan's Cove has won a number of awards for its whisky, including the title of 'World's Best Single Malt Whisky' at the World Whisky Awards.
