More than 30 different agave species can be used to make mezcal with, Tobalá, Tobaziche, Tepeztate, Arroyo, and Espadán being the most popular. The Espadán agave variety makes up to 90% of all mezcal. Tequila and mezcal largely come from separate parts of Mexico, despite some geographical overlap.
In Mexico, mezcal is often seen as a regional drink, with each state having its own unique style. The most common mezcal-producing states are Oaxaca, Guerrero, and Durango. Mezcal has a unique flavour that is often described as smoky or earthy. It is a strong drink, with an alcohol content that can range from 40% to 60%.
