At a Glance

Domaine Doussot-Rollet is a small family-run domain with a history dating back to the mid-19th century in the commune of Chorey-lès-Beaune in the Côte d’Or region of Burgundy. In comparison to many of its neighbours, the domaine is relatively small, comprising just 4.75 hectares. The domaine remains a family affair to this day, with Thomas Troussard, the son-in-law of the owner, serving as the head winemaker.

The estate is managed following traditional sustainable practices, having undertaken vine tilling for five generations. The domain is currently working toward attaining HVE certification (the highest French environmental certification), withholding the use of weedkillers and only treating diseases when strictly necessary. The vines on the estate are old, ranging between 40 and 95 years old, a testament to the generations of sustainable management undertaken by the domaine.

Corton-Charlemagne is one of the most prestigious appellations in the Côte de Beaune region. Comprising 59 hectares dedicated exclusively to the cultivation of Chardonnay, the appellation sits at the border between Côte de Nuits and the Côte de Beaune. First attaining its Grand Cru status in 1937, the Corton-Charlemagne AOC is exclusively Grand Cru. The history of winemaking in the commune dates back to 775 when the Emperor Charlemagne donated the vines to the collegiate church of Saint-Andoche.

Situated on steep slopes consisting of a 20-23% gradient at the highest point of the Corton Mountain, the vineyards sit at between 280 and 330 meters above sea level. Corton-Charlemagne is primarily exposed to the southwest, and is rare in the Côte. The appellation brings together the climats of Charlemagne, En Charlemagne, as well as a few neighbouring climats. This location offers a perfect geological cross-section between the younger Jurassic terrain of Ladoix-Serrigny and that of Mersault, which dates back some 145 million years. The soil is rich in clay, with varying colours ranging from yellowish to ochre to brown, and features limestone beds that alternate with marl under a thin layer of rendzinas.

With such intense richness of terroir, the Chardonnay from this site impresses with its remarkable concentration, elegance, and balance. Seldom does the varietal’s natural grace align so intimately with the distinct personality of its terroir. This wine exudes infinite delicacy, with a bouquet that unfolds in layers of buttery baked apple, citrus, pineapple, linden blossom, fern, juniper, cinnamon, and a hint of flint.

Such complexity and finesse call for equally refined pairings. Foie gras is a natural match; its richness and subtle bitterness are beautifully offset by the wine’s mineral tension and underlying power. More classically, noble shellfish such as lobster, crayfish, and crab create a spectacular harmony; their firm, delicately flavoured flesh mirrors the wine’s grace. Poultry or veal in a creamy white sauce offers a more grounded yet elegant pairing, while bold blue cheeses find balance in the wine’s structure and depth.
