An unapologetically bold rosé from the windswept slopes of Collioure, Minute Papillon 2023 is made entirely from Mourvèdre and crafted in tiny quantities by Philippe Gard of Coume del Mas. This is not your average summer sipper; it’s a serious, gastronomic rosé that walks the line between elegance and intensity, full of Mediterranean energy and depth.

Founded in 2001 by Philippe and Nathalie Gard, Coume del Mas is a leading name in Collioure and Banyuls, where heroic viticulture still defines the landscape. The domaine spans just 14 hectares across 32 fragmented plots, many of which are situated on Cambrian schist terraces that are nearly impossible to mechanise. Some vines plunge dramatically toward the Mediterranean, while others climb up to 380 metres above sea level; however, all share the tension and minerality that this ancient terrain imparts. Minute Papillon is a micro-cuvée made entirely from Mourvèdre. Grapes are hand-harvested, with a mix of rosé de saignée and direct pressing techniques employed to extract flavour and colour without sacrificing finesse. Fermentation and ageing take place in stainless steel, with bottling the following spring to preserve both aromatic purity and structural complexity. With yields of less than 25 hl/ha, this is a wine made in minute quantities but with maximum intention.
The wine pours a deep, vivid pink, hinting at its seriousness from the outset. The nose is lifted and expressive, with notes of wild strawberries, rose petals, crushed herbs, and sweet spice, complemented by a savoury, sun-baked edge. On the palate, the Mourvèdre shines through with its signature structure: there’s grip, a fine thread of tannin, and a refreshing but weighty presence. Flavours of cherry skin, blood orange, pink peppercorn and Mediterranean scrub unfurl into a long, saline finish that evokes the nearby sea.
Serve with beef tartare and tomato crisps, or pair with salads of fresh spinach, mint and feta. Also exceptional alongside chargrilled octopus, lamb kofta, or a vegetable tagine with preserved lemon. Best enjoyed chilled, but not too cold; let it open in the glass.
